Giant pigs in blankets Yorkshire pudding

The festive season is hereee so time to share my love for pigs in blankets in many, many recipes! With giant homemade pigs in blankets, Yorkshire pudding filled with creamy mash, then served it with peas and stuffing balls. Don't forget the gravy to pour over!

Step 1

Slice the bacon rashers in half lengthways to make 2 streaky pieces.

Step 2

Wrap both pieces around each sausage then air fry on 180C for 15 minutes or until cooked.

Step 3

In the meantime, boil the potatoes in salted water for 15-20 minutes or until fork tender.

Step 4

Mash along with the milk and butter, then season with salt & pepper.

Step 5

Cook the giant Yorkshire puddings as per packet instructions (I like to air fry mine on 180C for 4-5 minutes - cook these with the stuffing balls).

Step 6

Assemble with the mash inside the yorkie, pigs in blankets, peas and stuffing balls.

Step 7

Drizzle with gravy then dive right in.

Want to make your own giant Yorkshire puddings for less calories? Here's the recipe: 💕 In a mixing bowl whisk 2 eggs, 60g plain flour and a good pinch of salt together until it makes a thick batter. 💕 Gradually whisk in 140ml milk until all the lumps have gone. 💕 Place in the fridge for at least 30 minutes or overnight is the best. 💕 Spray two 20.5D x 20.5W x 4H cm (or thereabouts) with veg oil and place in a 200C oven for 10 minutes to heat up. 💕 Pour the batter evenly into each and cook for 15-20 minutes.

A little gutted I had to do without the yorkies - online shop didn’t deliver them 😭 However, it was still super tasty without! Love the edition of stuffing balls!
