Cheesy chicken fajita tacos

I made this tonight for the family for a super quick midweek dinner asI only had 10 minutes spare! This recipe would also be great for meal prepping!

Turn cooking mode on

Step 1

Season the sliced chicken with fajita seasoning.

Step 2

Fry in a pan sprayed with oil on a medium heat for 3-4 minutes to get a lovely colour.

Step 3

Flip and cook for a further minute before adding the veg and spray with oil.

Step 4

Further fry for a few more minutes before adding in the tomato puree and stir well.

Step 5

Pour in the passata and crumble in the stock cube mixing well, cook on high for a further minute.

Step 6

Lightly toast the mini tortilla then stuff with the fajita mix, then top with grated cheddar and dive right in.
