I usually add a smashed cucumber salad with this and spring onions but had ran out of both! For the cucumber salad grab 5 baby cucumbers (or use regular) and smash them with the back of a large knife, then roughly chop. Marinade with 1/2 tsp rice wine vinegar, a pinch of sugar, 1 tsp soy sauce and if you like a little chilli oil!

Needed this after a weekend away in Spain with friends!! I can’t eat cucumber so subbed it for a carrot salad using the same seasoning and a little fresh grated ginger. Yummy!
