Coconut chicken curry

I was blown away with how tasty this was! Just 6 ingredients, full of flavour and ready in just 20 minutes. I served it with basmati rice and fresh coriander which tasted banging!

Notes

I used full fat coconut milk to make the sauce thick and creamy. If you choose to use reduced fat, it will be a lot less creamy and I recommend adding a cornflour slurry (1-2 tsp cornflour mixed with 1 tbsp water) to thicken up the sauce!

Ahh man it should be super thick and like you said it'll depend on what coconut milk you buy. Annoyingly I can't remember which one I got for this - I looked back at the recipe video and its in a black tin!
