Turn cooking mode on
Step 1
Season the chicken with salt, pepper and smoked paprika.
Step 2
Spray a pan with oil and fry for 4 mins, add the cherry tomatoes and fry for a further few minutes.
Step 3
Mix in the tomato puree, bbq sauce and 2-3 tbsp water.
Step 4
Mix well and fry until it turns lovely and sticky.
Step 5
Place a tortilla wrap over the mixture to coat one side, then remove the chicken from the pan.
Step 6
Spray the pan with oil (do not clean) and place the tortilla back in the pan, sauce side down.
Step 7
Place the chicken mixture one side of the tortilla, fold the other side over to enclose then fry on both sides until crispy.
Step 8
Slice and dive right in.

I made this after the success of the chipotle steak quesadillas, it was great. Had to make the vinaigrette from that recipe as well!
