BBQ Chicken Quesadilla

Ready in just over 10 minutes, these smokey, cheesy BBQ Chicken Quesadillas are the perfect quick comfort meal. The chicken gets tossed in rich barbecue sauce, layered with melty cheese and fried until crispy and golden.

Turn cooking mode on

Step 1

Season the chicken with salt, pepper and smoked paprika.

Step 2

Spray a pan with oil and fry for 4 mins, add the cherry tomatoes and fry for a further few minutes.

Step 3

Mix in the tomato puree, bbq sauce and 2-3 tbsp water.

Step 4

Mix well and fry until it turns lovely and sticky.

Step 5

Place a tortilla wrap over the mixture to coat one side, then remove the chicken from the pan.

Step 6

Spray the pan with oil (do not clean) and place the tortilla back in the pan, sauce side down.

Step 7

Place the chicken mixture one side of the tortilla, fold the other side over to enclose then fry on both sides until crispy.

Step 8

Slice and dive right in.
