Slow cooker chicken & chorizo stew

A comforting dinner perfect for these colder months and easy as pie to make, as everything is just thrown into your slow cooker. Crispy chorizo pieces with chicken, baby potatoes and all the veg in a paprika-spiced tomato sauce.

Turn cooking mode on

Step 1

Fry the sliced chorizo in a pan for 3-4 minute until crispy and until the oils have released.

Step 2

Leave a few slices aside for later, then add everything in the slow cooker and cook on high for 3 1/2 hours or low for 7-8 hours.

Step 3

Finish with fresh parsley and the crispy chorizo slices.

Amazing, forgot to take a pic of the one I played up. But it was really flavoursome, a lovely meal for a chilly evening, even better that it was ready at the end of work. Got plenty of my 5 a day from it too.

Another lovely winter warmer on a cold night. Who doesn't love a recipe that you can chuck in and leave until its yummy?! Its very saucy so I think next time i might chuck some carrots or peas in to give it some more chunky bits
