We made this for dinner last night and are having leftovers for lunch today - really enjoyed it! It was pretty easy to knock up and didn’t take too long to cook. Husband said he wouldn’t mind if we always had fried rice like that 🤣

Anyone got a fast way of coating the chicken with cornflour? I ended up doing each piece one at a time so it took forever! The last time I did something similar to this I put the chicken in a bowl of cornflour and mixed it but some bits of chicken ended up with way too much cornflour on so it didn’t work out! Maybe it’s practice!

Hey Zoe it's a great question and the normal way is sooo time consuming isn't it! First coat the chicken in the whisked egg then stick the chicken in a freezer bag that's filled with cornflour. Close it up and give it a good shake!

That looks soo good! What the soy sauce does is tenderise the chicken breast as it can dry out very quickly in the air fryer 💪
