Really really nice flavour and easy to prep. I ran out of rice so I had to pair with noodles at the end which left it very saucy even though I reduced liquid in ingredient list.

Hey Emma! 🌟 Love that you experimented with noodles, that sounds delicious 😊 Noodles can soak up less sauce, but I'm thrilled it still worked for you!

Yep I added them in at end so no soaking up the sauce. But flavour is delicious so I will be making again with the rice for sure. X

It's currently cooking, looks lovely however I think the amount of stock is incorrect. I made this for 4 people, after 35 and removing the foil it was still completely swimming in coconut/stock. Not really sure how to salvage this now for dinner. I will try it again with less stock.

Hey Helen! Thanks for letting me know. How strange as mine wasn't watery at all... hmm i would carefully ladle off the excess coconut/stock so when you put it back in the oven to thicken, so there's less stick to cook off! Let me know how you get on and I'll recheck the stock measurements this week to make sure they are spot on. Thanks for flagging Helen x

Appreciate the response. I left it cooking for an extra 10 minutes which did the trick. It was loving I'll definitely be making it again.

Thanks Aoife! So glad you found it easy and yummy! 😊 I noticed another member say it was swimming in stock/coconut milk by the end of the 35 mins but did yours turn out ok?
