It's currently cooking, looks lovely however I think the amount of stock is incorrect. I made this for 4 people, after 35 and removing the foil it was still completely swimming in coconut/stock. Not really sure how to salvage this now for dinner. I will try it again with less stock.

Hey Helen! Thanks for letting me know. How strange as mine wasn't watery at all... hmm i would carefully ladle off the excess coconut/stock so when you put it back in the oven to thicken, so there's less stick to cook off! Let me know how you get on and I'll recheck the stock measurements this week to make sure they are spot on. Thanks for flagging Helen x
