Turn cooking mode on
1.
Mix all the sauce ingredients together and set aside.
2.
Tenderise the steak, slice into thin strips then marinade with 2 tsp soy sauce, 1 tsp garlic granules and black pepper.
3.
Dip the steak strips into whisked egg then coat with cornflour.
4.
Place the beef strips in the air fryer, spray with low calorie spray and cook on 200C for 12-14 mins or until crispy (Alternatively oven cook on a lined baking tray on 200C for 20 minutes).
5.
A few minutes before the beef is cooked, add the sliced peppers and onion to an oiled pan and soften for a few mins.
6.
Pour in the sauce and cook on high for 30 seconds or until the sauce starts to bubble then stir in the beef strips until coated.
For the egg fried rice:
1.
Fry the onions in an oiled pan for a few mins to soften, then add in the peas for a couple of mins before scrambling the eggs, then mix with the peas and onions.
2.
Mix in the cold, cooked rice then season with the dark soy sauce and sesame seed oil until everything is fully coated.

It took 2 hours in total to make. Although it was nice - dipping the strips and cooking in the air fryer took too long as the fryer could only hold a certain amount of strips.

Hey Michelle! I recommend adding all the strips that are coated with egg wash into a zip-up freezer bag filled with cornflour. Much quicker and less messy too! Also what type of air fryer do you have? If you gave a dual then place them in both draws x

That’s a good idea re the freezer bag. I have a double air fryer but think because I was cooking for 4 - it still took 3 goes for it all. I was trying to keep all the strips separate as I was worried they would stick together. X

Wowzer another unbelievable meal! One of the best fakeaways I’ve made. We followed the recipe to serve 2 but next time I think it will stretch to three (portion leftover for lunch) 10/10 will definitely be having this again 🤩
