Turn cooking mode on
Step 1
Cook the pasta, drain and keep a 1-2 tbsp pasta water aside.
Step 2
In the meantime, fry the onion in low calorie spray for 2-3 minutes to soften, then add the mushrooms and garlic and cook for a few more minutes.
Step 3
Remove the onions, mushrooms, and garlic from the pan.
Step 4
Tenderise the chicken breast until flattened, then season with salt, pepper, paprika, mixed herbs, garlic and onion granules.
Step 5
Fry the seasoned chicken in the same pan with low calorie spray on medium heat for 4 minutes on each side, then let them rest.
Step 6
Put the onions, mushrooms, and garlic you cooked earlier back into the pan.
Step 7
Add the chicken stock and mix well.
Step 8
Mix in the single cream, then add the cooked pasta from earlier along with the reserved pasta water.
Step 9
Slice the chicken, then place it on top of the pasta, along with a sprinkle of dried parsley and enjoy!

Excuse the photo!! So I made a big pan so it can be for dinner and meal prep and added extra veggies for us. We used the pasta we had so slight variation. I did find it a little watery like others have mentioned so added a little light cream cheese and seems better! Very tasty. As others have mentioned would be nice without meat too!!

Hey Christine that still looks absolutely banging! Thanks for your feedback and a great suggestion to thicken it up! I've only ever made this for 2 people so like Ayesha said below, it think the extra stock just isnt needed to keep the sauce creamy! x

Did 4 portions and 200ml stock plus cream mixed with pasta was still very watery and not like the video. Do not increase the stock if you increase portions.

Hey Ayesha thanks so much for your feedback! How did it taste? I've only ever made it for 2 people and the stock was the perfect amount so I think you're right. I don't think you need to increase the stock for more people and I shall write a little note on the recipe! x

The chicken portions are not changing when I increase the portion numbers. So how many grams of chicken for 4 portions?

Hey Ayesha - I think it's because the automation can't recognise the amount due to the 'x2' I've used for the weight. I've changed it to 330g chicken breasts now and its picked it up and working :)
