Tuna pasta bake

A family dinner we made last night that I HAD to share with you guys. Under 500 cals and a whopping 55g protein!! With red pesto, tuna and 3 types of cheeses for a cheesy flavour sensation.

Cook

Turn cooking mode on

Step 1

Spray a pan with oil and fry the onions and peppers for a few minutes to soften.

Step 2

Stir in the pesto and fry for a further minute to release the flavours.

Step 3

Pour in the chopped tomatoes (or passata) and chicken stock, then season with salt, pepper and chilli flakes (sprinkle in the Aromat if using).

Step 4

Cook on high until it starts to bubble, then scatter in the uncooked pasta mixing well.

Step 5

Simmer for 10-12 minutes or until the pasta is cooked and sauce has thickened (add a dash more water if needed - I like cooking mine al dente as it cooks further in the oven!).

Step 6

Gently stir in the tuna then transfer to an oven dish, finally top with all 3 cheeses.

Step 7

Oven cook on 200C for 15 minutes or until the cheese has a lovely brown colour and the sauce is bubbling.

Step 8

Serve with fresh parsley and a piece of garlic bread.
