Loaded peri chicken flatbread with crispy cajun potatoes

This was a recipe I made for the family midweek that I took a quick snap of as I HAD to share it with you all! I needed something quick, tasty, with minimum ingredients and SUPER filling. This was it.

Turn cooking mode on

Step 1

Season the potatoes with salt, pepper, and cajun seasoning.

Step 2

Spray the potatoes with oil and air fry at 200°C for 15-20 minutes, shaking every 5 minutes. If you have a 2-drawer air fryer, use them both to cook more evenly.

Step 3

Butterfly the chicken breast, then slice all the way through to create two pieces.

Step 4

Season the chicken with paprika, garlic granules, salt, pepper, and 1 tablespoon of peri marinade.

Step 5

Fry the chicken in a pan sprayed with oil on medium heat for 4 minutes each side. For the last 2 minutes, add another tablespoon of peri marinade.

Step 6

Remove the chicken from the pan and let it rest for 4 minutes before slicing.

Step 7

Spread 1 tablespoon of mayo over each lightly toasted flatbread.

Step 8

Place the salad on top of the flatbread, add the sliced chicken, then drizzle the remaining peri marinade over both flatbreads and serve with the crispy potatoes.
