Chicken fajita gnocchi

One of those easy mid-week meals where your short on time and need something tasty but nourishing. All the fajita flavours with mixed peppers, onions, chicken with the simplest of creamy sauces, mixed with crispy air-fried gnocchi.

Turn cooking mode on

Step 1

First spray the gnocchi with oil and air fry on 190C for 10 minutes to crisp up (alternatively oven cook on 200C for around 15 minutes). Spray a pan with oil and add the veg and chicken in.

Step 2

Season the chicken with half the fajita seasoning and fry for 4-5 minutes.

Step 3

Pour in the chopped tomatoes (or Passata), the remaining fajita seasoning and crumble over the chicken stock cube.

Step 4

Mix well before adding the Philadelphia, once that's mixed in add the cooked crispy gnocchi.

Step 5

Top with the grated cheese then stick under a hot grill (or if your pan has a lid, stick it on for a few minutes to melt). Serve with fresh parsley and optional slice of garlic bread.
