Turn cooking mode on
Step 1
Cook the pasta in salted water until cooked. Drain and keep a few tablespoons of pasta water aside.
Step 2
In the meantime fry the peppers in oil spray until tender.
Step 3
Add the beef mince then season with taco seasoning and brown for 3-4 minutes.
Step 4
Add the chicken stock and reserved pasta water, then the single cream and cook on high until it starts to bubble, then mix in the grated cheddar.
Step 5
Stir in the cooked pasta and serve with some extra cheddar and optional fresh parsley.

I didn't have single cream but used cream cheese instead. Was lovely, and we had it with wraps and salad. Think we'll be adding a bit more stock and maybe some passata next time ๐

Hey Sally so I made this twice recently. Once with onion and once without, both worked well but I prefer the onion for extra flavour. I've just updated the recipe to add the 60g onion x
