I used full-fat mozzarella as I find the reduced-fat/lighter ones are super watery and I didnt want it to spoil this recipe! Of course you can use it if you wish to save on the cals 💕

This was so simple to make (I hate stuffing chicken because it all falls out and I get paranoid the meat won't cook properly) and genuinely delicious - I had little plum tomatoes rather than cherry and I sliced them up then couldn't wedge all of them in. Chucked them in a silicon mould underneath the chicken with an extra spoon of pesto and just added them to the plate at the end. Still not entirely sure what aromat is but the potatoes were great and perfectly cooked. Might start sprinkling aromat on everything.
