Perfect for an easy dinner for busy weeknights or great for meal prep, it packs so much flavour with very little effort. The chicken is coated in a peanut sauce and fried until golden, then served with sticky rice and a vibrant chilli crisp cucumber and spring onion salad to cut through the richness.
