Hey Mandy! Hmm im not sure as the coconut milk makes it saucy/ creamy, do you still want it creamy in texture or just a standard curry consistency? If you don't want it creamy - You can add beef stock and turn it into more of a brothy curry or stew. It will still taste good—just not creamy. If you want it creamy - stir in cream or yogurt at the end of cooking but add more beef stock while cooking so it doesn't dry out Hope that helps x
